It seems like ages ago, but before Christmas, I went to a Holiday Theme Pinterest Party. Being a total pinning addict, this was such a fun party! Everyone made something to share and the recipes had to come from one of your pin boards.
I asked for help from my readers about their favorite party food pins. My friend, Maddie, gave me a great recipe from one of her pin boards. She said it’s always a huge hit anytime she’s made it. It’s super easy, no cooking required and it’s transportable.
I did make a couple changes to the recipe. I used reduced fat feta cheese (you can’t taste the difference!), replaced dried herbs with fresh oregano, parsley & basil and topped the dip with fresh lemon juice.
The dip was a huge hit! It was almost like a Greek style bruschetta since we ate it with bread. It’s definitely something I’ll be making again!!
Feta Dip with Fresh Herbs & Lemon
- Extra virgin olive oil
- 1lb Reduced fat feta cheese (buy it in a block, not crumbles)
- 3 -4 Roma tomatoes, diced
- 10 Green onions, chopped
- 2 tbsp Parsley, chopped
- 1 tbsp Oregano, chopped
- 1 tbsp Basil, chopped
- Red pepper flakes (optional)
- Salt & Pepper, to taste
- 1 lemon, juiced
- 1 baguette, sliced
- In a large platter, pour olive oil. (it should cover the bottom of the platter.)
- Crumble feta cheese over platter. Add tomatoes, green onions and herbs. Mix everything together.
- Taste. Add red pepper flakes, salt & pepper.
- Top dip with lemon juice.
- Serve with bread. I bought a french bread baguette from the bakery section at my local grocery store and that was perfect with this dip!

Good Morning to all of you! I’m happy you’ve come by to see me today. After the massacre on Friday, I don’t think I can bring myself to do my usual light-hearted posts. My heart goes out to all those effected by that monster who killed so many innocent people. I know how it feels to be a victim of tragedy — life doesn’t seem fair and you feel like there is no way any of this is real, but unfortunately, it is. No words, gestures or cards can take the pain away of losing someone you love unexpectedly. When people would tell me “life will get easier, just give it time,” I secretly wanted to tell them they have no idea what they’re talking about…. but they were right in a way. Life moves on and dwelling on what could have been prevented isn’t going to bring a person back.
If I knew someone effected by the shooting in Newtown, I think I’d tell them they will think about their loved one every day for the rest of their life and time will help you heal… but there is no rush to get back into your normal routine because that man stole what your normal life used to be. Moving forward, all you can do is tell the ones you love how important they are to you and try not to have hate in your heart for what has happened. I know that’s easier said than done…
So I’m not going to do a recipe post today but I’m asking for some help from you. I’ll be attending a Holiday Themed Pinterest Party this Thursday with some of my girl friends. We’ve all agreed to bring a sweet or savory dish we’ve seen on pinterest. I still have yet to decide what I want to make.. there is so much out there to choose from!

Happy Friday! How was your Thanksgiving? I started off my day with a 4 mile run, cooked in the afternoon and watched a lot of football. It was the perfect day!

There has been a lot of chatter about the BCS National Championship game — could we have a Notre Dame vs. Alabama match up?? I attended Online BlogCon last week. I learned so much great information..but the thing I was most surprised by was the network I gained. There were so many awesome bloggers and the Facebook page for the group was blowing up 24/7. It was hard to keep up with everyone’s helpful tips and questions.
One of the first people I connected with was Jocelyn from Inside BruCrew Life. I asked a question about blog design and transferring to WordPress.org. Jocelyn was the first person to respond and she gave me a great referral of the woman who recently helped her. Her new page is sooo cute! And she lives in Indiana. It’s probably another reason why I like her so much
After the conference, I was thinking of ways to highlight other bloggers I love. Of course I can pin their recipes to Pinterest, write comments on their posts, like them on FaceBook… but I wanted to do something more. Twitter has this thing called #FollowFriday. You list people you think your followers should follow too. Why can’t I do that on my blog??!!
Even though I come up with a lot of my own recipes, I love making things other people have done. It takes the pressure off of me and I feel relaxed following a recipe. I was always good at following directions and that’s all a recipe is, right??
One thing I don’t post a lot of are dessert recipes. I have a huge sweet tooth, so I’m shocked that I don’t. But guess who loooves to post sweet treat recipes?? Inside BruCrew! And guess what people??! These recipes are delicious, unique and use common ingredients. I picked my top 5 favorite recipes from her blog. Trust me, I had a hard time just picking 5. EVERY recipe looks good. So here is my seriously narrowed down list.
Milk Duds in a brownie??!! Jocelyn might be a genius.
This recipe will keep your pumpkin addiction alive and you can skip the trip to Starbucks.
Instant pudding adds some extra richness and using Reese’s Pieces make this a fun fall looking cookie.
One thing this recipe title leaves out is the streusel topping…and it’s made with Cinnamon Toast Crunch Cereal. I know, wow!!!!!
Peanut Butter and Brownies Batter??!! Yes, please! And you don’t even need a fancy mixer attachment to make this ice cream happen.
